Named Nooh, a combination of "No" for those who don't want alcohol and the chemical symbol for the alcohol molecule "OH"
Château La Coste sits within a landscape steeped in the rich history of its Provençal setting. The original bastide was established in 1682 but it has existed as a domaine since the Roman times, with an agricultural and winemaking tradition marked by the land, evident in the presence of dry stone walls, bridges and wells. The grapes were taken from a number of vineyards with varying soil types all sourced from growers that have long-standing partnerships with the winery. The most prominent soils are deep clay-limestone.
Using La Coste’s Rosé d’Une Nuit organic cuvée as the base wine, alcohol was then extracted via vacuum distillation. Evaporation occurred at a maximum of 35-40°C, so as not to negatively a/ect the wine and to preserve aromas. The
sparkling wine was then made sparkling using the carbonation method and both wines were completed with the addition of 3.5gAl residual sugar to enhance mouthfeel.

A brightly aromatic nose, combining watermelon, citrus and rose floral characters with a hint of jasmine. The taste brings forward more melon and strawberry flavours with a zingy tang of grapefruit on the finish.
