Domaine Boyar was the first private wine-producing company created afer the fall of the communist regime in Bulgaria in 1989. It started operating in 1991 and over the course of several years, thanks to its dedicated winemaking team and access to quality native and international grapes, it became the most significant player of Bulgarian wine on the international market.
The climate in Bulgaria is strongly influenced by the Mediterranean Sea, the Black Sea and the Balkan Mountains (600-3000 meters). The combination of two climates - moderate continental and Mediterranean climate, provide for acidity (freshness) and concentration thanks also to the more than 200 days of sunshine a year. This unique combination gives the Bulgarian terroir its typical character of power and finesse. Chardonnay grapes are processed under anaerobic conditions and the juice is fermented in cool conditions in stainless steel to preserve the fresh, vibrant fruit character.
