The grapes were hand-harvested in early March, at their optimal point of ripeness, to preserve both their freshness and varietal character. After harvesting, the bunches were rapidly transported to the winery, where they underwent a gentle whole-bunch pressing, designed to minimise the extraction of anthocyanins (the compounds present in the grape skins responsible for colour in red wines). Only the must obtained from the lightest press fractions was used, achieving a juice of minimal colouration and high purity. Fermentation took place at low temperatures, using yeasts selected for their ability to enhance the characteristic aromas of Malbec, maximising its aromatic expression. After fermentation was complete, the wine was kept at low temperatures to preserve its fresh and fruity notes, enhancing its aromatic profile and its youthful and refreshing character
